Fillet of Rawas
Ingredients:
Fish Fillets (large) 2
For Marinade: Salt to taste Pepper to taste Chives a small bunch Coriander a small bunch Lemon Juice ½ lemon Olive Oil 1½ tbsp Method:
Cut each fillet to 2 or 3 pieces depending on the size.
Make a rough paste with the ingredients of the marinade.
Marinate and pan sear the fish.
Marinate and apply paste to both the fillets (like to make a sandwich).
Wrap in cling film and keep in the fridge till ready to cook.
